Inspired by both psychedelia and fruity gummy snacks of our youth, we approached this hazy IPA motivated to pop off the new year with a bright, complex, and bombastic beverage. Enter Numby Gummy. We made some technical tweaks in our brewing processes in crafting this hazy IPA, aiming to unlock the latent fruit flavors in hops by optimizing the biochemical interplay between yeast and hop flavor compounds, a process called biotransformation. With this brew, we aimed at pushing the biotransformation processes to the max to generate unique IPA flavors.

This involved a very intentional use and selection of hops at all stages, with carefully timed additions in the mash, boil, whirlpool, and multiple dry hop additions with hop varieties possessing the right chemical makeup to drive potent biotransformation reactions.

What does all of this jargon mean?? 

We take the right yeast, with the right hops used at the right times, and that yeast chemically transforms the compounds the hops provide into new chemicals with unique flavor not found in the source materials. Expect a bold, complex IPA, with a rainbow of complementary flavors. Juicy berries, bright tropical fruit, zippy citrus, and sweet candy give the impression of a smooth tropical fruit smoothie, but delivered in a lighter, drier format.
